The Summer Salads

My Chef Prepared Picks ( & one of my own)


 

Summertime is in full swing and nothing satisfies me more than a fresh, tasty salad!  Managing a cancer diagnosis can lead to challenging, taste friendly menu alternatives.  

I've been fortunate to hang out with a few accomplished chefs, farmers and food enthusiasts in 2016, and I've tasted a few things.  So here's my short list of my favorites so far. I'll post again in the fall, with some suggestions & salads after the main harvests. First up:  Chef Kellers Zucchini & Avocado Salad

*note - Chef Keller recommends if you want to switch out the protien, then cooked shrimp would be a good alternative

Ingredients:  Chef Keller said its okay to switch out edamame for cooked shrimp

Next:  Edgemere Farms Summer Quinoa Salad

Well.  What I do know about this salad is:

-Fresh lettuce was harvested from the farm 

-Quionoa was the foundation

- Slices of Mandarin

- Olive oil dressing ( a little lemon, a flavored vinegar)

- Salt & ground pepper 

This Salad was good!

 

The finished product:  Summer Quinoa Salad

Fresh made Kale Pesto & Amond Butter with a bread purchased  from a local baker. A lil fresh olive oil is drizzled on the bread.  This was so good! 

I'm snacking & getting ready to die the napkins for use at Edgemere Farms summer dinner series.

Celebrating my year finishing chemo!  I wish I could find more of these!  My first ever North Carolina Yellow Watermelon!  So good I'd definitely add it too the summer salad menu!

The ingredients to my Crunchy Sweet Summer Salad!  In addition I forgot to put in that I added fresh cubed ripe Mango.  Mmmmmmm.
